Camping Cookery: Easy Recipes For The Great Outdoors

One of my favorite meals while camping is, “Fried Fish And Ash Grilled Tomatoes’ cooked on an open fire.

Fried Fish And Ash Grilled Tomatoes

Olive oil
Salt
Pepper
Onion powder
Garlic powder
Lemon juice

Place several flat rocks in the area for your campfire to use as racks for your pans. Build a good size hot fire and let it die down so that you can use the heat from the coals to cook.

Catch and clean and filet the fish that you want to fry. Sprinkle fish with all the seasonings on both sides and rub lightly.

Rub tomatoes with olive oil then cut in half and sprinkle with salt, pepper, garlic, and onion powder, drizzle the tops with olive oil.

Place your skillet directly into the hot coals and add enough olive oil to cover the bottom of the pan. Let the oil heat to sizzling then add your fish, place the pan on one of the flat rocks inside of the coals.

Grease the bottom of another pan, add tomatoes cut side. Sit tomatoes on a flat rock in the fire let cook until tomatoes are heated. Squeeze lemon juice over fish and serve.
